Meatball soup - recipe (including photos)

Ingredients:
  • 3 eggs
  • 3 onions
  • 2 bell peppers
  • 150 grams of rice
  • 500 grams of minced meat
  • 1 liter of bors made from fermented wheat bran (you can find it in the Eastern European dedicated stores - there is one on rue de Strasbourg, there is also a Polish guy selling stuff in front of Roller in Strassen)
  • 2 carrots
  • 200 grams of tomatoes juice
  • salt
  • pepper

For the meatballs, mix the 2 eggs with the rice, one chopped onion, 1 grated carrot, salt and pepper.

The composition for the meatballs should look like this:

Separately, boil the remaining onions, the chopped bell peppers and the carrot.

Make little meatballs.

Once the vegetables are boiled at slow fire, add the meatballs and let them boil together for half an hour, without mixing.

Add the tomatoes juice and after another half an hour add the bors and let them boil at slow fire for another 15 minutes.

In a separate bowl mix one egg with 10 spoons of soup and put this mixture in the big bowl continuing mixing.

At the end you can add the chopped parsley.

You can eat the soup with sour cream, or paprika pepper.

Bon Appetit!
