Biscuits with creamy filling - recipe

Ingredients for about 80 plain biscuits (which means 40 double-layered biscuits):
  • 300 grams of wheat flour
  • 200 grams of butter at room temperature
  • 150 grams of powdered sugar
  • 4 eggs
  • a bit of salt
  • a bit of vanilla sugar
Ingredients for the filling:
  • 200 grams of fresh cream
  • 100 grams of milk chocolate (or dark, if you prefer)
  • 1 spoon with sugar 
Ingredients for the glaze:
  • 100 grams of dark chocolate (or white, or both)



Preheat the oven at 180 Celsius degrees!

Beat the butter (previously left at room temperature) with the powdered sugar until fluffy.


Add the eggs one by one and beat until well incorporated.



Add the flour little by little, the vanilla sugar and the salt, to obtain a dough like a thick pudding.



Put the composition in a piping bag and place little balls on an oven tray, not too close between each other.

With a finger dipped in cold water push the top of each dough ball to flatten just a little bit.



From this composition you will obtain about 6 trays :) of biscuits.

Bake the biscuits it in the preheated oven for 8-12 minutes or until golden brown.

When ready, let them cool!


Prepare the glaze:
Melt the chocolate at bain-marie: put the chocolate chuncks in a pot which is kept above another pot with boiling water.


Put the liquid chocolate in a piping bag (one with a very small hole) and spread the chocolate above half of the biscuits you made.


Prepare the filling:
In a pot melt the chocolate over a slow fire. Let it cool.

Beat the fresh cream with the sugar. Incorporate the cold melted chocolate and mix. Put it in the fridge for at least 30 minutes.



Assembling:
Now you will start with the other half of the biscuits, the ones without glaze.

Take each biscuit without glaze, spread some filling in the middle and then press above one biscuit with glaze, as shown in the photos below.
